General Information:
- Shapes fresh pasta using durable POM (polyoxymethylene) plastic or bronze
- POM is safe for food contact if produced and processed correctly, in compliance with European regulations. It ensures that the taste, texture, and safety of food are not altered, making it ideal for pasta extrusion
- Bronze is a metallic alloy primarily composed of copper and tin. In the food industry, bronze suitable for food contact is used in accordance with European regulations. It is processed to prevent the release of harmful substances. Bronze is resistant and durable and is valued for giving pasta a rough surface, which helps sauces adhere better and gives the final product an artisanal texture
Safety Recommendations:
- Keep out of reach of children
- Do not modify components or use with incompatible machines
- Check for any damage before use
- Avoid forcing components; align properly during assembly
- Do not use abrasive sponges or caustic, acidic, or other harsh cleaning agents such as alcohol, gasoline, or propanol
Before Use:
- Wash and dry thoroughly; preheat for better extrusion performance
Dough Precautions:
- Hydration: 38%–44%; minimum 42% for delicate shapes
- Recommended recipe: 150g of re-milled semolina, 110ml of liquids (water or 2 eggs + water)
- Let the dough rest for 30 minutes to absorb moisture and develop gluten
During Extrusion:
- Stop immediately if the dough is too dry; add more liquid
- Reinsert the dough if the first extrusion is unsatisfactory
- In case of overheating, stop the extrusion process
Maintenance:
- Clean with the recommended tools
- Avoid boiling water
- Do not place accessories near heat sources such as ovens or microwaves
Troubleshooting:
- Irregular shapes: adjust dough hydration
- Assembly issues: check alignment, cleanliness, and compatibility
