Tips for seasoning:
To season your fresh pasta, we recommend Matriciana. An evergreen that always makes you lick your lips.
You will need tomato sauce, guanciale, pecorino cheese and pepper.
Cut the bacon into strips and brown it on a high heat in a frying pan.
When it is nice and crispy, remove it from the pan and leave the cooking fat. Add the tomato sauce and cook over low heat for 1 hour. Once cooked, add pecorino cheese and well-drained guanciale. Stir until the pecorino has melted.
Cook the pasta for 5/6 minutes in boiling water. Throw it into the sauce, which will be well cooked and fragrant. Serve with more pecorino cheese and a little pepper.
